Promoting a non-interventionist approach to winemaking... Le Cuvier produces exquisite small-production wines utilizing native yeasts, dry-farmed fruit and neutral barrel aging. Led by Paso legend John Munch, we promote a hands-off approach to winemaking—which results in wines of distinct character. You will not find our wines in retailers or restaurants, so why not join us for a tasting at our stunning hilltop location? We are open from 11AM to 5PM Thursday through Sunday, and request reservations for groups of six or more. Well-stocked with passionate staff and delicious wines, our tasting room was the first to offer food pairings as part of the standard tasting—and continues that tradition today. While members of our wine club (The Elliptical Society) taste for free, non-members are charged $15 for individual tastings and $20 for shared. Each tasting fee is waived with the purchase of a bottle. While we are pet-friendly, please note that we cannot accommodate our four-legged friends indoors, as we have a commercial kitchen onsite. We do have water bowls on our porch, and dog-crazed staff on-hand for belly rubs.
